Spinach Chickpea Fritters

I absolutely love experimenting with beans, veggies, and spices. Here I created some protein-packed spinach chickpea fritters with some slight heat, and some serious depth of flavor thanks to Berbere Bounty Spice Blend.

Ingredients:

1 can of chickpeas, set aside aquafaba

2 cups fresh spinach packed tight

1/2 cup of walnuts

1/2 cup seeds (I use a mix of sunflower, pumpkin, and hemp)

1/3 cup aquafaba

1/3 cup panko breadcrumbs

1/3 cup Bob's Red Mill 7-grain hot cereal (dry)

1/4 cup tahini

1/4 cup red onion

2 tbsp Berbere Bounty Spice Blend



Blend all ingredients in a food processor until well incorporated. Fry over medium heat in a pan lightly oiled with avocado oil, 5 minutes on each side. Cover while cooking. Serve topped with any combination of spread and fresh vegetables, or even enjoy in a bun and topped like a burger.
